Chicken Artichoke Antipasto Zoodles

If you've been following my Instagram, you may have noticed I currently follow a ketogenic diet. Keto to me was the one thing that FINALLY got rid of my bloat. It improved my digestion and energy and tasted amazing in the process. When I eat keto, I don't get joint pain in my knees and elbows, I don't get ridiculous food cravings and I can maintain this lifestyle anywhere I go. Keto can be as easy or hard as you'd like to make it. Personally, I prefer easy. Like this dish. Six ingredients, 10 minutes, delicious!


Chicken Artichoke Antipasto Zoodles


  • 1-2 cloves of garlic

  • 1-2 T grass-fed butter

  • 1 1/2 cups zucchini noodles

  • salt / pepper to taste

  • 2 oz cooked / baked chicken breast

  • 2 T Trader Joe's Artichoke Antipasto


  1. In a frying pan, heat butter over medium heat. Sautee garlic until slightly brown

  2. Add in zucchini noodles and cooked for 2-3 minutes

  3. Stir in cubed chicken breast and continue to cook for another 2-3 minutes

  4. Transfer to a bowl and top with artichoke antipasto and fresh basil
